I love this sandwich, and I make it often for last-minute dinners and weekend lunches on cold days. There’s truly nothing better than dunking a fancy grilled cheese into a yummy homemade soup. Which soup, you ask? This sandwich goes great with both Tomato Basil Soup and Pesto Pea Soup. I like to freeze leftover soup just for this reason—for fast weeknight meals that taste like they took all day to make!
